Il Panettista

When bread becomes beer

Something special is currently being created in our brewery. Our master brewer Tobias and baker Roger have joined forces to brew a new seasonal beer: Il Panettista.

For this brew, we used 65 kilograms of stale bread from our own bakery. This produces around 1,800 litres of beer. By using the bread, the proportion of brewing malt was reduced by around 15%.

At the moment, Il Panettista is still fermenting. It will take some patience before the beer is available in glass or bottle.
