Il Panettista
When bread becomes beer
Something special has come to life in our brewery: Brewmaster Tobias and baker Roger have crafted the seasonal beer «Il Panettista» together. For this brew, 65 kilograms of leftover bread from our own bakery were used, resulting in around 1,800 litres of beer. By incorporating the bread, the proportion of brewing malt was reduced by about 15 percent.
The bread beer “Il Panettista” is a top-fermented, naturally cloudy beer, characterized by a subtle sour, citrusy note and a delicate hint of salt from the addition of bread and lye pastries. It is a lively, refreshing beer with low bitterness and a dry finish.
Brewed from Pilsner malt, Carapils malt, hops, top-fermenting yeast, and various types of bread containing rye, wheat, and lye pastries (salt), this creates a specialty top-fermented beer with 5.0% ABV.
Now available on tap in the restaurant as well as in 0.33 l bottles in the shop.
